Sweet Potato Apple Chili





Sweet Potato & Apple Chili

 Ingredients:

1 20-24 oz. of lean ground turkey
1 Tbl.sp oil (I use avocado)
1/4 C chicken bone broth
1/2 tsp. ground black pepper
1 tsp. salt
1 large yellow onion, diced
8 large cloves of garlic, crushed
1 large sweet potato peeled & cut into small chunks
1 green pepper diced
1 large carrot shredded
1 Honeycrisp apple, skin on, diced small
1 granny smith apple, skin on, diced small
2 cans Fire Roasted Diced Tomatoes & Green Chilies (I use Rotelle)*
2 cans of Rotelle Chili Fixins Seasoned Diced Tomatoes & Green Chilis*
1 tsp. ground cinnamon
2 Tbl.sp chili powder
1/2 Tbl.sp ground cumin
1/2 Tbl. sp crushed black pepper
2 generous pinches of salt
1/2 Tbl. Sp. dark brown sugar, or cane + molasses, (plain cane works fine too, brown has more depth)
12 oz. (3 C) of chicken bone broth.
Additional salt & pepper will be used at all stages of the cooking process. 
Beans are optional, I usually make this bean-less, but if you like beans, add this: 
1 15 oz. can dark red kidney beans, drained & rinsed
1 15 oz. can light red kidney beans, drained & rinsed

Directions:

*Note when I say season with salt & pepper, I jut throw in some pinches if each, I do not measure. The measurements are for the chili seasoning mixture. 

Chop (& peel if needed) all veggies & apples. Keep sweet potatoes separate from the rest. Pro Tip: Microwave your sweet potato for 4-5 min after peeling to make chopping faster and easier. 

In a 5 qt. pot heat olive oil over med/hi heat.

Add ground turkey and break it up really well. Season with salt & pepper. 

Add the 1/4 c bone broth,  Continue cooking, stirring continuously until the meat is thoroughly cooked. Transfer to a bowl and set aside.

Add oil to the pot, over med-high heat Sautee the sweet potatoes, season with salt & pepper, stirring often until they start to brown. Add to the bowl with the ground turkey.

Add more oil

Mix spices & sugar together in a small mixing bowl. Add broth & mix well. Pour over the contents in the pot and stir well.

Bring to a boil & stir constantly for 3-5 min. Cover and reduce heat to a very low simmer. Let simmer for at least 5 hours (or 8 in a crockpot).

Garnish with your favorite chili toppings. (i.e. cheese, sour cream, green onions etc.)




*if you are unable to find the pre-seasoned diced tomatoes, add 1 more Tbl. Sp of chili powder, an additional 1/2 Tbl. Sp of cumin , 2 tsp. dried basil, 1 tsp. oregano & 1-2 more cloves of garlic.
